Peel the eggplants with stripes and soak them in salty water for half an hour to reduce the oil. After washing them well, pat them dry with a towel and fry them in a little oil. Fry 3 peppers in oil as well.
Then, sauté the chopped onions in the same pan, add the minced meat and sauté for a while, then add the peppers and garlic and sauté for 2 more minutes. Add 2 diced tomatoes, salt, and spices and mix. Add a cup of water and let it simmer for 5 minutes.
Place the eggplants in a tray by cutting the middle and creating space for the filling, then fill them with the mixture. Place halved cherry tomatoes or 1 regular tomato on top and add one of the fried peppers.
In a separate bowl, mix 1 tablespoon of tomato paste with 1 cup of hot water and pour it between the eggplants. Be careful not to pour it over the meat.
Then, bake in a preheated oven at 170 degrees for 20-25 minutes. You can also do this in a pot like a rice cooker on the stove. It will cook in the same amount of time.
